Short description of event: A keen hunter and fisherman himself, KJ will teach your how to prepare meat and fish for smoking and curing. Explore the different processes of cold smoking and hot smoking meat, poultry and fish. Learn about brines/marinades, making nitrate free bacon, sample cold smoked pork belly that has been slow roasted in the woodburner. You will learn how to prepare, flavour and smoke kahawai fish.
